I often ran out with time, or just felt overwhelmed about the thought to cook some breakfast for myself.
On those days when I worked out of home in my other office, I lacked some yummy, filling, but easy to grab a meal, that would not be bread or just a piece of fruit.
But I couldn't find what I was looking for until one day, in the beautiful restaurant in Bali, I had the best overnight oats of my life.
Before that, I thought I would have it, that it would be like a soggy, slimy meal, without nay flavour or texture...
I couldn't be more wrong.
So here they are, my Bali inspired overnight oats.
I tweaked them tpo my likinig and I would encourage you to do the same.
Use seasonal fruit, blend them with your favourite spices and use what's available around you.
Here are my favourite combos:
Mashed banana, cinnamon and PB
Cacao powder, frozen raspberies and almonds
Turmeric, vanila and cacao nibs with seasonal fruit
Vanilla, cinnamon and salted caramel protein
Dates, walnuts and coconut
Often I topp up my overnight oats with Chia seed pudding, Chia jam or plain yogurt.
Overnight Oats, Bali inspired
Ingredients: Makes about 4 portions
1 cup of rolled oats (you may use rolled and quick oats too)
1 banana mashed
4 tsps chia seeds
3 cup of plant-based or organic milk
1 tsp of cinnamon (helps balance blood sugar)
4 heaped tsp of natural yogurt/coconut yogurt or cottage cheese
OPTIONAL: 1 tbs flax meal /2 scoops of protein powder
Method: Place banana, milk, chia seeds and cinnamon in a blender and blend until smooth.
Into an airtight container place oats and any other flavourings or toppings you like (dates/ nuts/ cacao nibs/cacao powder etc.)
Mix well.
Pour over blended mixture and yogurt if using and stir well.
Place in a fridge for at least 2 hours or the best overnight.
You may serve cold or warm it up in a separate bowl, topped up with yogurt, chia pudding, PB, fresh fruit or anything else you like. TIP: You may choose to make them in small mason jars (or recycled jam jars) and then top them up with anything you like to create quick snacks to work or a busy time at home.
