Sweet and Sour Tofu

When it comes to tofu, it's often hit and miss if you don't know how to add flavour to this often tasteless plant-based protein.

I love working with tofu because it's like a blank canvas to me.

It soaks up all the flavours you introduce to it and is so easy to work with.

This sweet and sour tofu is definitely one of my old-time favourites, but like with everything I made it a bit healthier than is in the original recipe.

Sweet & Sour Tofu

Ingredients: 4 portions

1 packet of firm tofu

3tbs of tapioca starch or maize

1 orange (fresh) or 1/2 cup OJ

1 tbs grated ginger

3 cloves of garlic

1/2 cup chopped fresh pineapple

2tbs soy sauce

salt & pepper

Cashew or Peanuts (optional)

Chilli flakes

1/2 lemon juice

Method: Cut tofu into cubes.

Place tapioca starch and tofu into a container with lid and shake well until all is evenly covered.

Heal your pan with a touch of coconut oil and pan-fry the tofu for few minutes until nice and gold - you may place tofu onto a baking tray and bake in the oven instead.

Once the tofu is pan-fried, add, into the same pan, squeezed orange juice, pineapple, garlic, ginger, soy sauce, chilli and lemon. Add salt and pepper to taste.

Add nuts if using.

Let simmer for about 10 minutes.

Meanwhile, cook your rice or any other grain you decided to serve you dinner with and stir-fry some vegetables on a side.

Serve warm.

TIP:

Chose firm or firm organic tofu to make your life easier as it holds together a bit better than silky tofu.
