Homemade veggie loaded pizza

Ohhh, I love pizza so much and my husband too. But I know that you will agree when I say that shop-bought or takeaway pizza is not always the best option and pizza that tastes really good is always just a touch too expensive. So what don't make your own? This one is with my homemade dough which is loaded with veggies and also the whole pizza carries about 1kg of different kinds of vegetable to provide you with an amazing experience, nutrients and full.

Start from the base


My quick go-to pizza dough is made out of flour of your choice, salt, olive oil and water.

I made this one a bit different. Used combination of buckwheat, chickpeas and coconut flour, egg and grated carrot.



As a base sauce, I always mix good canned tomatoes, with some finely chopped onion, garlic and oregano, a touch of balsamic vinegar and salt.



And the toppings. There is really no limitation. I like to add as many veggies as I can to have different flavours and textures. Use different kinds of cheese or protein. There is no "best way" to have your pizza.

So use your imagination and enjoy the final result.

My trick when using veggie sin the dough is to prebake your base first, otherwise, you will have underdone dough with burnt toppings.

Dough Ingredients, serves 2.

1 & 1/2 cup of GF or Wholemeal Flour (I used combination of chickpeas, buckwheat and coconut flour) 1 egg 1/2 cup of Carrot finely grated Crushed garlic 1 clove 1 tsp of oregano salt Sauce:

1/2 cup of diced tomatoes 1/4 of finely chopped onion 1 diced clove of garlic salt 1 tsp balsamic vinegar 1 tsp oregano Toppings: 2 cups of veggies of your choice 50g of grated cheese 50g of aromatic cheese protein to your liking (meat, fish, egg, beans, ...) Method: Place all dry dough ingredients into a bowl and mix well. Add grated carrot and egg. combine all together. Add some water if needed to make dough sticky and spreadable. Spread onto a sheet of baking paper using a spatula and vetted hands. Preheat your oven to 200°C. Place dough onto a baking tray and bake for about 15-20 min depending on sought thickness until it become lose on a baking paper. Raise your oven temperature to 220°C. Add sauce and all toppings onto pre-baked pizza base. Place back into the oven and roast another 15 min until brown on the edges and cheese melted. Let sit for 5 min before slicing. Enjoy with your favourite glass of sparkling water and great company.
